Red Bean and Ham Salad

Ingredients

1 cup rajma (red kidney beans)
1 tsp salt
11/2 tbsp finely chopped onion
50 gm (2 oz) ham,cut into 1 cm(1/2 inch) squares
Finely sliced capsicum rings for garnish
Finely sliced onion rings for garnish

For Dressing
3 tbsp salad oil
11/2 tbsp vinegar
Pinch salt
Pinch pepper
Pinch mustard
2 cloves crushed garlic

Method

1. Soak beans in water overnight. Drain.

2. Add 11/2 cups water and salt to beans and pressure-cook 15 minutes. Or cook in a pan with 3 cups water till beans are soft and almost dry. Drain. Put beans into bowl.

3. Mix all ingredients for Dressing. Pour over beans while they are still warm. Add chopped onion. Mix well and when cool, refrigerate several hours or overnight.

4. Just before serving, mix in ham.

5. Garnish with capsicum and onion rings.
